Bakliyat \u015eenli\u011fi, 17 May\u0131s\u2019ta \u0130stanbul Ticaret Odas\u0131 (\u0130TO) tesislerinde ger\u00e7ekle\u015ftirildi.<\/p>\n<p style=\"text-align: justify;\">T\u00fcrk mutfa\u011f\u0131n\u0131n vazge\u00e7ilmez \u00fcr\u00fcnleri aras\u0131nda yer alan bakliyat \u00fcr\u00fcnlerinin sa\u011fl\u0131k ve beslenmeye olan faydalar\u0131, ger\u00e7ekle\u015ftirilen bilimsel \u00e7al\u0131\u015fmalar \u0131\u015f\u0131\u011f\u0131nda her ge\u00e7en g\u00fcn daha iyi anla\u015f\u0131l\u0131yor. Ara\u015ft\u0131rmalar, bakliyat t\u00fcketiminin kanser olu\u015fumunu, tip 2 diyabet ve obeziteyi \u00f6nlemede son derece etkili oldu\u011funu g\u00f6steriyor. Ayr\u0131ca, mide-ba\u011f\u0131rsak sistemi ve kalp damar sa\u011fl\u0131\u011f\u0131 ile ili\u015fkilendiriliyor olmas\u0131 bakliyat\u0131n \u00f6nemini art\u0131r\u0131yor.<\/p>\n<p style=\"text-align: justify;\">Birle\u015fmi\u015f Milletler\u2019in (BM) T\u00fcrkiye\u2019nin giri\u015fimleriyle 2016 y\u0131l\u0131n\u0131 \u201cUluslararas\u0131 Bakliyat Y\u0131l\u0131\u201d olarak ilan etmesiyle, bakliyat\u0131n sa\u011fl\u0131k ve beslenme \u00fczerindeki faydalar\u0131 t\u00fcm d\u00fcnyada bir kez daha g\u00fcndeme ta\u015f\u0131nd\u0131. T\u00fcrkiye\u2019de de bakliyattan g\u0131da end\u00fcstrisinin kullanabilece\u011fi yeni \u00fcr\u00fcnlerin elde edilmesi; bakliyat\u0131n bilinen t\u00fcketim alanlar\u0131n\u0131n \u00e7e\u015fitlendirilmesi; yenilik\u00e7i \u00fcr\u00fcnlerin geli\u015ftirilmesi ve sa\u011fl\u0131k \u00fczerindeki etkileri konusunda toplumun bilin\u00e7lendirilmesi amac\u0131yla \u201cBakliyat ile Sa\u011fl\u0131kl\u0131 Beslenme Sa\u011fl\u0131kl\u0131 Hayat Platformu Projesi\u201d hayata ge\u00e7irildi.<\/p>\n<p style=\"text-align: justify;\">PAKDER taraf\u0131ndan \u0130stanbul Teknik \u00dcniversitesi (\u0130T\u00dc) ve Y\u0131ld\u0131z Teknik \u00dcniversitesi (YT\u00dc) G\u0131da M\u00fchendisli\u011fi B\u00f6l\u00fcmlerinin ortakl\u0131\u011f\u0131nda y\u00fcr\u00fct\u00fclen \u201cBakliyat ile Sa\u011fl\u0131kl\u0131 Beslenme Sa\u011fl\u0131kl\u0131 Hayat Platformu Projesi\u201d, \u0130stanbul Kalk\u0131nma Ajans\u0131\u2019n\u0131n \u201c2015 Y\u0131l\u0131 Yenilik\u00e7i \u0130stanbul Mali Destek Program\u0131\u201d kapsam\u0131nda destekleniyor. Bakliyat \u015eenli\u011fi, 17 May\u0131s\u2019ta \u0130stanbul Ticaret Odas\u0131 (\u0130TO) tesislerinde ger\u00e7ekle\u015ftirildi. \u00c7ok say\u0131da bilim insan\u0131, doktor, diyetisyen, mutfak sanat\u00e7\u0131s\u0131 ve sanayi temsilcisinin bakliyat\u0131n \u00f6nemine ili\u015fkin bilgi verdi\u011fi Bakliyat ile Sa\u011fl\u0131kl\u0131 Beslenme Sa\u011fl\u0131kl\u0131 Hayat Sempozyumu\u2019na kat\u0131lan bilim insanlar\u0131; \u201cBakliyat, gelece\u011fin g\u0131das\u0131!\u201d ortak g\u00f6r\u00fc\u015f\u00fcnde bulu\u015ftu.<\/p>\n<p style=\"text-align: justify;\">Sempozyum a\u00e7\u0131l\u0131\u015f konu\u015fmas\u0131nda projeyle ilgili bilgi veren PAKDER Y\u00f6netim Kurulu Ba\u015fkan\u0131 Hakk\u0131 \u0130smet Aral, bakliyat s\u0131n\u0131f\u0131na giren mercimek, nohut, fasulye, bakla, bezelye ve b\u00f6r\u00fclcenin d\u00fcnyada 2 milyardan fazla insan i\u00e7in protein kayna\u011f\u0131 oldu\u011funu s\u00f6yledi. Aral, \u201cBakliyat t\u00fcketiminin artt\u0131r\u0131lmas\u0131, kullan\u0131m alanlar\u0131n\u0131n geni\u015fletilmesi ve dolay\u0131s\u0131yla T\u00fcrkiye bakliyat \u00fcretiminde de art\u0131\u015f\u0131n hedeflendi\u011fi bu projeyle, sekt\u00f6rel sorunlar\u0131n \u00e7\u00f6z\u00fcm\u00fcne katk\u0131 sa\u011flanmas\u0131 hedeflenmektedir. \u2018Bakliyat \u0130le Sa\u011fl\u0131kl\u0131 Beslenme Sa\u011fl\u0131kl\u0131 Hayat Platformu Projesi\u2019 arac\u0131l\u0131\u011f\u0131yla, g\u00fcnl\u00fck beslenme al\u0131\u015fkanl\u0131klar\u0131nda bakliyat kullanma e\u011filiminin artt\u0131r\u0131lmas\u0131, toplumda bakliyat\u0131n sa\u011fl\u0131k \u00fczerine olumlu etkilerine ili\u015fkin bilin\u00e7 olu\u015fturulmas\u0131; bakliyat i\u00e7in katma de\u011ferli \u00fcr\u00fcn \u00e7al\u0131\u015fmalar\u0131 ile de farkl\u0131 kullan\u0131m alanlar\u0131n\u0131n yarat\u0131lmas\u0131 en b\u00fcy\u00fck hedeflerimizden biri olacakt\u0131r.\u201d diye konu\u015ftu.<\/p>\n<p style=\"text-align: justify;\"><strong>Gluten hassasiyeti olanlar i\u00e7in bakliyat se\u00e7ene\u011fi<\/strong><\/p>\n<p style=\"text-align: justify;\">Proje kapsam\u0131nda ger\u00e7ekle\u015ftirilen \u00e7al\u0131\u015fmalar sonucunda bakliyat\u0131n y\u00fcksek protein, y\u00fcksek lif ve d\u00fc\u015f\u00fck ya\u011f i\u00e7ermesi nedeniyle beslenmemizin \u00f6nemli bir par\u00e7as\u0131 oldu\u011fu ortaya konuldu. Sempozyumda s\u00f6z alan bilim insanlar\u0131, bakliyat \u00fcr\u00fcnlerinin \u00f6zellikle gluten hassasiyeti olanlar i\u00e7in de iyi bir se\u00e7enek oldu\u011funu dile getirdiler.<\/p>\n<p style=\"text-align: justify;\">Bakliyat ile Sa\u011fl\u0131kl\u0131 Beslenme Sa\u011fl\u0131kl\u0131 Hayat Platformu Projesi\u2019nin g\u00f6n\u00fcll\u00fc el\u00e7isi Diyetisyen Dilara Ko\u00e7ak ise sa\u011fl\u0131kl\u0131 bir hayat i\u00e7in bakliyat\u0131n g\u00fcnl\u00fck beslenmemize mutlaka d\u00e2hil edilmesi gerekti\u011fini kaydetti. Dilara Ko\u00e7ak, \u201cGeleneksel kuru fasulye, nohut ve mercime\u011fimiz \u00e7ok lezzetli ama biraz daha farkl\u0131 tariflerle t\u00fcketimi artt\u0131rmak ve toplumun geneline yaymak b\u00fcy\u00fck \u00f6nem ta\u015f\u0131yor. Bu anlamda bakliyat unuyla yap\u0131lan tariflerin geli\u015ftirilmesini de bir beslenmeci olarak \u00e7ok de\u011ferli buluyorum\u201d dedi.<\/p>\n<p style=\"text-align: justify;\">Sempozyum ve 1. Bakliyat \u015eenli\u011fi\u2019nde bakliyat \u00fcr\u00fcnleriyle yap\u0131lm\u0131\u015f 50+10 s\u0131ra d\u0131\u015f\u0131 yiyecekte sergilendi.
